What's for Dinner: Chicken Madeira

I want to share a recipe that I found on Pinterest. Recently I made this for my family and I tweaked it a little bit as I felt the sauce was not thick enough.

This recipe has a bit of not exactly prep work but gathering all the ingredients for your mise en place (who knows if I spelled that right lol). After that it is pretty easy and extremely tasty.

INGREDIENTS
For the Chicken:
  • 4 skinless chicken breast fillets
  • kosher salt and freshly ground black pepper
  • 5 TB olive oil, divided
  • 1 cup shredded mozzarella cheese
  • For the Sauce:
  • 2 TB olive oil
  • 8 oz fresh white mushrooms, sliced
  • 3 cups madeira wine (almost a full bottle)
  • 4 cloves minced garlic
  • 2 cups beef broth
  • 2-4 TB cornstarch dissolved in 2-4 TB of the beef broth (depends on how thick you want the sauce)
  • 1 TB salted butter
  • ¼ tsp freshly ground black pepper

    First I browned the chicken in a pan with a little olive oil. After cooking the chicken, I removed them and placed them in an airtight container to keep them warm. In the same pan that you cooked the chicken in (do not wash it), add a little olive oil. When that starts to bubble, add the mushrooms for about 2 minutes. Then add the rest of the sauce's ingredients into the mushroom filled pan. Bring it to a boil then reduce heat to a simmer. Cook for about 20 minutes until the sauce thickens to the consistency of your liking.
     
    What I did was I made some mashed potatoes and green beans and I placed it on a plate. I added the mozzarella to the chicken then I added the sauce which melted the chicken. It is super rich and yummy and pretty easy to pull off.
