This is my mil's recipe that she taught me a few years back. This is authentic salsa and I can say that with confidence since my mother-in-law lived is Mexican and lived there most of her life before coming to the US about 20 years ago. When I first met my then future MIL, I was definitely a little bit nervous as my husband said she could be a handful (and he was right, but I do love her though she knows how to test me lol). Anyway my first experience with her was late evening after my shift had ended so obviously I was not expecting anyone to be having dinner so late. As soon as I entered she gave me a hug and promptly a plate, full of food. Since it was so late, I had already eaten and was not hungry so I apologized but complimented her at how great it look (because it looked absolutely delicious). Then she replied, "Oh!!! You're not hungry? Ok ok ok." She took my plate but my now husband grabbed it away from her and immediately started eating at the table. So I sat down and was conversing with my now FIL, when my MIL burst into the dining room with an even bigger plate of food. She sat it down in front of me. I admit I was flabbergasted at the huge portion, while my husband tried, unsuccessfully, to contain his laughter. With a kind smile, my MIL said, "Here you go. Eat. Eat." Now to this day I am unsure if she forgot that I had already eaten or she just wanted me to eat something before I left. Well, what could I say to that? So I did eat, and was completely stuffed after the meal that I thought I would have to be rolled out the door; yet everything was absolutely delicious. This was the first time in my life that I had fresh salsa verde and it was amazing. I admit it was so spicy that tears came to my eyes, but I kept eating because the flavor was out of this world. This brings me to the recipe, which you can make mild, medium, spicy or whatever heat you prefer.
Fresh Salsa Verde
Ingredients
jalapeƱos
red onion
a few cloves of garlic
cilantro
limes
tomatillos
salt and pepper to taste
In a blender add your chopped up tomatillos, jalapenos (start with one seeded then you can add more later to amp up the spice), a clove or two of garlic, a handful of cilantro (keep the stems as they have a lot of flavor), half a red onion, a little bit of water, and freshly squeezed lime juice. Blend until everything is chopped up to whatever consistency you like. Now you taste. If its not spicy enough add another jalapeno. If it doesn't have enough of the garlic flavor, add another clove or two. Not enough cilantro, onion, lime juice, add it. This recipe really is to your liking so just add until its how you want it to taste. It is super easy and absolutely delicious...and way better than the jarred stuff at the grocery store.
